Dark chocolate cupcakes with Bailey's Irish Cream-cream cheese icing, in Transformer cupcake liners which were on sale and had mostly green graphics. I got the flavor idea from Sprinkles Cupcakes , and I decided to try my hand at ridiculously expensive treats. Between you and me, I think I have a future in that business.
I think everyone has their own preference for chocolate cake recipes, but this icing is the bomb diggity and it's so easy!!
Bailey's Irish Cream- Cream Cheese Icing
You need:
- 1- 8oz package of cream cheese softened
- 1 stick of unsalted butter softened
- 2 cups of powdered sugar
- 4 Tbsp Bailey's Irish Cream ** okay this is the part where I'm a jerk and fudge the recipe because I didn't actually measure this, but I think this is about what I used.
1. Using an electric mixer combine the cream cheese and butter.
2. Add the sugar in three installments by mixing on LOW!!!
3. Finally (yes, it's really as easy as 1-2-3) drizzle in Bailey's until desired flavor/consistency is achieved.
